Sodexo Award-Winning Chefs Craft Christmas Recipes
To support clients and customers during the busy Christmas season, a team of Sodexo’s award-winning chefs have crafted ‘A Sodexo Christmas Recipe Guide’, packed with treasured recipes, plus culinary tricks and tips for an enjoyable and stress-free festive feast.
The culinary guide, which was developed by John Core, the company’s culinary nutrition lead and inaugural winner of the Paula Mee applied culinary nutrition award from TU Dublin, features contributions from Niall Hill, head of food, craft development chefs Cathy Adamson and Stephen Boyle, regional development chefs Glen Stewart, David Sayce and Gordon Carberry, part of the Irish senior team at this year’s Culinary Olympics.
All the chefs involved have won awards and accolades at national and international level and are engaged in mentoring and ongoing development of Sodexo’s culinary teams on client sites around Ireland.
The guide features easy to follow instructions for recipes like root vegetable soup with Christmas focaccia bread, smoked salmon and crab, butter brined turkey crown, an apple-glazed cider braised smoked ham and a delicious mushroom and chestnut wellington vegetarian alternative. There’s also gravies, sauces, sides and desserts that can be made well in advance for a frazzle-free day.
